This Shirodashi from Yamamori is a concentrated Japanese soup base with a light, clear color. It is perfect for dishes where you want to maintain the natural, vibrant look of your ingredients, such as in Japanese rolled omelets, clear soups, and rice porridge. The sauce is made from a savory extract of bonito flakes (katsuobushi) and kombu seaweed, blended with a light-colored soy sauce to deliver a rich, umami flavor that won't overpower the other ingredients.


How to Use (Recommended Ratios)
Japanese Rolled Omelet (Dashimaki): 1 part Shirodashi to 56 parts water.
Clear Soup: 1 part Shirodashi to 1012 parts water.
Japanese Porridge (Ochazuke): Add directly or mix with other broths to your desired taste.
Hot Pot or Fusion Dishes: Dilute to your preferred flavor intensity.


Storage Instructions
Store in a cool, dry place. After opening, refrigerate and use within 34 weeks. Shake well before use, as some natural sediment from the dried fish may settle at the bottom.
