This Mentsuyu Usukuchi from Yamamori is a light-colored, concentrated Japanese soup base. It's made with savory bonito flakes (katsuobushi) and kombu seaweed, but its usukuchi shoyu base prevents it from darkening your dishes. This makes it perfect for dishes where you want to highlight the natural colors of your ingredients, such as Japanese rolled omelets, clear soups, and omakase-style fish soups.
How to Use (Recommended Ratios)
Hot Soba/Udon Soup: 1 part Mentsuyu to 6-8 parts water.
Cold Somen/Saru Soba Dipping Sauce: 1 part Mentsuyu to 2-3 parts water.
Japanese Rolled Omelet (Dashimaki): 1 part Mentsuyu to 5-6 parts water.
Tempura Dipping Sauce: Mix 1 part Mentsuyu with 2 parts water and add grated daikon.
Storage Instructions
Store in a cool, dry place. After opening, refrigerate immediately and use within 1 month. Shake well before use, as some natural sediment from the ingredients may settle at the bottom.
