Engawa is the muscle from the fin of flatfish like flounder. It's highly prized for its rich, fatty marbling and a texture that's both tender and firm, melting in your mouth with a unique aroma. This product is a popular choice for omakase menus, perfect for Engawa Sushi, lightly seared Engawa Aburi, or classic sashimi. Our engawa is conveniently pre-sliced and Individually Quick Frozen (IQF) for easy use and to lock in quality. Usage
Thaw the product by placing it in the refrigerator (0-5°C) for 4-6 hours.
Slice it into bite-sized pieces. It can be served raw or lightly seared with a blowtorch to enhance its aroma.
Serve with soy sauce, wasabi, or a sprinkle of sea salt.
Storage
Store in a freezer at -18°C.
Once thawed, do not refreeze.
For the best quality, use within 24 hours of thawing.
