Our Dried Kanpyo is made from long strips of dried Japanese gourd (calabash). This traditional ingredient is a staple in futomaki (sushi rolls), shojin ryori (Japanese vegetarian cuisine), and omakase menus. The strips are a beautiful off-white color and, once rehydrated and cooked, become tender and soft. You can season them in a sweet and savory sauce with soy sauce, sugar, and mirin before using them as a sushi filling or in other dishes.
Usage
Soak the kanpyo in clean water for 20-30 minutes until the strips are soft.
Rinse and squeeze out the excess water.
Cook it to your liking, and then use it as a filling for sushi or as an ingredient in other dishes.
Storage
